
Easter is just around the corner and I don’t know about you but I always like to have the family around and do a delicious lunch or dinner. I saw this chocolate cake recipe from Katelyn Williams and it sounds absolutely divine. I’ll definitely be trying it out this Easter weekend.

Chocolate stout cake
Ingredients
1 cup stout beer
224g butter, cubed
75g cocoa, sifted
2 eggs
2/3 cup sour cream
2 cups of cake flour
1 1/2 teaspoons bicarbonate of soda
2 cups castor sugar
Icing
4 egg whites
1 cup light brown sugar
1/4 cup cocoa, sifted
Method
1. Preheat the oven to 160°C.
2. Heat the stout and butter, until melted.
3. Remove from heat and whisk in the cocoa.
4. Set aside.
5. Whisk the eggs and sour cream and add to the stout mix with the flour, bicarbonate of soda and castor sugar. Whisk well.
6. Pour into a greased loaf or cake tin and bake for 1 hour 20 minutes or until a skewer comes out clean.
7. Cool slightly in the tin before turning out.
8. For the icing, whisk the egg whites in a bowl over simmering water until soft peaks form. Gradually add the light brown sugar and beat until stiff.
9. Remove from the heat and slowly whisk until cool. Whisk in the cocoa and top the cake with mounds of the meringue.
Good manners
You may have a child who is a wonderful academic achiever or one who doesn’t get top marks but if you have a child with good manners, this will take them far. Recently I visited two schools, St Martin’s Prep and Marist Brothers Linmeyer and was blown away by how well-mannered the children were at both schools. To be greeted and made to feel welcome in their schools made me feel really special. Manners cost absolutely nothing but make a world of difference. Well done to parents who insist on their children being well-mannered.
