American style barbequing is trending

A DAY out was celebrated by all contestants at Rietvlei on August 3, when they could put their BBQ’ing skills to the test.

The event was called Up in Smoke and men or women who enjoy the art of barbecuing could do exactly that. This was a first-ever smoking contest (an all grill) which is an American style BBQ smoking concept, according to Gareth ‘Braaiboy’ Daniell.

There was no fixed way of smoking, and the first category of food on the prescribed list for the contestants was chicken, the second was pork and the third was a free choice of whatever they wanted to use.

Contestants prepared their different products on tables: salting their meat or poultry products, adding ingredients for the necessary flavour, etc. Traditional braai units were used to assist with the smoking. “In fact, this isn’t braaing at all. It’s smoking! No, really, that’s what this discipline is called,” Braaiboy explained.
