Peaches remain a summer favourite which are rich in flavour, freshness and nutritional value. With the festive season approaching, a rich peach syrup is fitting as a glaze on chicken or pork – while remaining versatile enough to be enjoyed with ice cream.
Quinton Mostert, store manager at Food Lover’s Market at Mall @ Newmarket, suggests canning peaches, which can then be used for desserts and cooking when the fruit is not in season, or as a delicious, homemade stocking filler this Christmas.
• Rinse peaches and place in boiling water for 30 seconds, then dip in ice water. This process helps to loosen the skin.
• Remove the peach skins, cut the fruit in half and remove the pips, making sure to scrape away the red fibers around the pip, as this may cause the fruit to darken during the canning process.
• Place the peaches in a prepared fruit protector.
• Mix sugar and water in a saucepan and bring to boil until sugar has dissolved and a syrup is formed.
• Drain the peaches and pack the cut peaches into hot jars with 1.5cm headspace.
• Add the hot syrup to within 1.5cm from the rim of the jar, remove any air bubbles with a non-metallic spatula and add extra syrup if jar allows.
Seal and wipe the jar and its rim. Place jars on a rack in a deep stock pot of hot water. Cover and bring to boil. Remove jars from hot water and place onto a dish towel – do not touch the jars directly. Cool for several hours or overnight. Test seals before storing.
